Camping Recipe: Creamy Vegetable & Chicken Chowder

This is one recipe my family loves at home or on the road, and whether I double or triple it, there never seem to be any leftovers! Plus, it’s made with just a handful of ingredients you probably already have on hand and comes together in about 10 minutes flat.

Creamy Vegetable & Chicken Chowder

Ingredients:

  • 1 stick of butter
  • ½ cup flour
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 tsp salt
  • 1 tsp black pepper
  • 32 oz chicken broth
  • 2 15 oz cans mixed vegetables, drained
  • 16 oz cooked, diced chicken breast (I use a container of rotisserie chicken chunks)
  • 1 quart half and half or evaporated milk

Starting Tips:

  • First, take a look at this. Acknowledge it is not a low-fat recipe, but it is definitely full-flavor! Plus, it does have vegetables in it!
  • Next, decide how you want to treat the vegetables. Me? I drain the cans, throw half of it in the food processor, and process until smooth. Sure, it does look a little gross until you add it into the pot, but that way my kids eat it, don’t fuss about the texture or pull out the veggies they don’t like, and wolf it down. I leave the other half un-pureed just for a little bit of texture.
  • If you prefer a meatless version, simply omit the chicken and substitute vegetable broth if you prefer.

Directions:

  • In a soup pot, melt the butter. Stir in the flour, garlic and onion powder, salt and pepper. Allow the mixture to simmer about one minute.
  • Whisk in the broth, drained (or pureed) vegetables, and diced chicken (if using). Let this simmer for about five minutes.
  • Whisk in the half and half and let it simmer an additional five minutes. Do not boil.

We like to serve this with the cheddar biscuits you can make from the storebought box (Red Lobster brand).
