Try This Camping Recipe Perfect for the Holidays!

One of my kids’ favorite breakfast treats during October and November is pumpkin chocolate chip muffins! It’s incredibly easy to make, and perfect for this time of year. Cozy up in the living room of your new or used RV with the fireplace kicked on and enjoy these scrumptious muffins! Grab this delicious camping recipe below!

Pumpkin Chocolate Chip Muffins

Ingredients:

  • 4 eggs
  • 1 cup brown sugar, packed
  • 1 cup regular white sugar
  • 1 15-oz can pumpkin
  • 1 ½ cups oil
  • 3 cups all purpose flower
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp cloves
  • 2 cups dark chocolate chips

Directions:

  • Preheat oven to 400 degrees F. Grab a muffin tin, line it with paper muffin cups, and lightly coat with nonstick cooking spray.
  • In a large bowl, combine eggs, sugars, pumpkin, and oil, beating until until smooth.
  • In a separate medium bowl, combine remaining dry ingredients except chocolate chips and whisk well until fluffy.
  • Add the dry ingredients to the wet ingredients in 2-3 steps, stirring gently to mix. Fold in the chocolate chips and mix.
  • Distribute batter evenly the prepared muffin cups.
  • Bake 16-18 minutes or until dark golden brown. You can test for doneness by inserting a toothpick – when it comes out clean, your pumpkin chocolate chip muffins are done!
  • Let cool in the pan for a few minutes, then transfer muffins to a wire rack to finish cooling.
